Easy Healthy Rice Bowls are the Best

You ever feel like you want something quick and healthy but also filling? Want to make sure you eat your fruits, veggies, and protein? Well, since my seafood dishes usually take me a good amount of time, my go to is usually a rice bowl. Not only are there endless possibilities of what you can include in a rice bowl, but each possibility is just as delicious as the next! You want a little extra nutrients one day? Go with brown rice. You've been feeling your sweet tooth all day? Add in some chopped mango. You want to get your protein in? Make sure you add a lot of lean chicken. You want to try something new and healthy? Try some turmeric rice and chickpeas!

Our Go-to Rice Bowl Recipe

We usually go with white rice because it is quicker to make, but if you're trying to eat whole grain brown rice you'd be getting more nutrients like the fiber, vitamin D, antioxidants, minerals, healthy fats, and more. If you really want to get fancy you can try a different kind of rice like cilantro lime rice or spinach rice. Check out our blog if you want to learn how to make different kinds of rice. For the toppings I usually start with cut up lean chicken breasts rubbed with some Loubier Gourmet Chipotle Hot Seasoning and pan-seared until temp (step by step directions can be found bellow), spiced black beans, chopped tomatoes, chopped green onions, avocado, and a different aioli every single time. The rice bowl we described is our semi-healthy fast bowl. You can make it as healthy, unhealthy, exotic, or as simple as you want. We'll make sure to include a variety of recipe ideas for you. Some are really interesting too! You can even take it all the way and turn your bowl into a Poke Bowl. The possibilities are endless and delicious.

Chipotle Chicken Rice Bowl

Prep Time: 10 minutes

Cook Time: 15 Minutes

Total Time: 25 Minutes

Serves: 4

Ingredients
  • Loubier Gourmet Chipotle Seasoning
  • 4 Boneless Chicken Breasts 
  • 1 Cup Cooked Black Beans
  • 2 Avocados
  • 1 Large Tomato (2 Medium Ones)
  • Chopped Green Onions
  • Olive Oil
  • Aioli of Your Choice
  • 2 Cups Long Grain White or Brown Rice
  • Salt & Pepper to Taste 
Directions
  • Step 1
    I like to start with the rice and chicken because they both usually take the longest to cook. Follow your instructions for the rice you use. Ours for example asked for 1 1/4 Cups Water to 1 Cup Rice, I've seen 2 to 1 ratio before, it really depends on the rice you use. And if you don't know how to cook rice, or want to learn about a variety of rices, you can find the instructions here.
  • Step 2
    Once your rice is cooking, you want to get your chicken in a pan. Cut your chicken into small even pieces. We like to filet the breasts first, cut them in strips, and then into little chunks. Heat up a medium skillet to medium high heat, season your chunks with Loubier Gourmet Chipotle Seasoning, Salt & Pepper, and throw them into the pan with olive oil.
  • Step 3
    While your chicken and rice are cooking, begin to warm up your beans. If you are interested in using uncooked beans, you need at least 24 hours. Learn how to cook raw beans here and make them delicious. If you need to, grab a can of beans and warm it up in a small pot. You want to season them with some more Loubier Gourmet Chipotle Seasoning, Salt & Pepper.
  • Step 4
    As everything continues to cook, you want to begin to prep your cold ingredients. Begin by dicing up your tomatoes, halving your avocados and cutting them into strips, and chopping your green onions. 
  • Step 5
    Last but not least, you want to prepare your aioli. This is my favorite part because you are pretty much choosing the flavor the brings it all together. Check out our aioli blog to find out which one you want to try! For a Chipotle Chicken Bowl like this one, I'd usually go with a Sriracha Aioli which consists of 3/4 mayonnaise, 1 tablespoon Sriracha, 1 teaspoon Loubier Gourmet All Purpose Seasoning, and Salt & Pepper to taste.
  • Step 6
    Everything should be ready and cooked by this point, you just need to assemble your bowl, and...

Veggie & Mango Rice Bowl 

Prep Time: 20 minutes

Cook Time: 5 Minutes

Total Time: 25 Minutes

Ingredients
  • Loubier Gourmet All Purpose Seasoning
  • 2 Large Mango (Diced)
  • 1 Cucumber (Sliced into thin coins)
  • 1 Cup Cooked Black Beans
  • 2 Avocados
  • 2 Tbsp Pickled Ginger
  • Chopped Green Onions
  • 2 Cups Shredded Cabbage
  • 1/2 Cup Toasted Peanuts
  • Sesame Seeds
  • Aioli of Your Choice
  • 2 Cups Long Grain White or Brown Rice
  • Salt & Pepper to Taste

  • Step 1

  • Meat of Your Choice
  • 1 Cup Whole Kernel Corn
  • 2 Cups Chopped Romaine Lettuce
  • 1 Cup Cooked Black Beans
  • 2 Avocados
  • 1 Large Tomato (2 Medium Ones)
  • Chopped Green Onions
  • Olive Oil
  • Aioli of Your Choice
  • 2 Cups Long Grain White or Brown Rice
  • Salt & Pepper to Taste 
  • Cilantro (Chopped)
Directions
  • Step 1
    I like to start with the rice and choice of meat whether it is chicken, beef, or pork because they both usually take the longest to cook. For our rice, we decided to make some traditional Mexican red rice. Check out our recipe to learn how to make it!
  • Step 2
    Once your rice is cooking, you want to get your meat in a pan. You don't have to pan-sear it, you can always cut it another way, and if you aren't going to include meat, you can disregard this step. Cut or slice your meat into small even pieces. Heat up a medium skillet to medium high heat, season your chunks with Loubier Gourmet Chipotle Seasoning, Salt & Pepper, and throw them into the pan with olive oil.
  • Step 3
    While your meat and rice are cooking, begin to warm up your beans. If you are interested in using uncooked beans, you need at least 24 hours. If you need to, grab a can of beans and warm it up in a small pot. You want to season them with some more Loubier Gourmet Chipotle Seasoning, Salt & Pepper.
  • Step 4
    As everything continues to cook, you want to begin to prep your cold ingredients. Begin by dicing up your tomatoes, chopping your lettuce, halving your avocados and cutting them into strips, and chopping your green onions. 
  • Step 5
    You could make an aioli for this bowl (for a Burrito Bowl like this one, I'd usually go with a Chipotle Aioli, and you can find the recipe here), but if you want to keep it traditional, throw some sour cream and guacamole on top (the guac would ideally substitute the avocado added in the prior step).
