Chipotle Rubbed Baked Chicken with a Hot BBQ Glaze and a Side of Sautéed Kale

Ingredients


For the Chicken:

  • 2 Large Chicken Breast
  • ½ Teaspoon Salt
  • 1 Teaspoon Pepper
  • 2 Tablespoon Loubier Gourmet Mild or Hot Chipotle Rub
  • ½ Cup Loubier Gourmet Mild or Hot BBQ Sauce
  • ½ Tablespoon Olive Oil

For the Sautéed Kale:

  • ½ a Bunch of Kale
  • Half an Onion, Thinly Sliced
  • 1 Tablespoon Loubier Gourmet All Purpose Mild or Hot Seasoning
  • 1 ½ Tablespoon Olive Oil
  • ½ Cup of Vegetable Stock or Water

Other Ingredients:

  • 2 Tablespoons of Butter
  • ½ Large Garlic Clove
  • 1 Teaspoon of Finely Chopped Parsley

 

Directions for Chicken

  • Step 1
    Preheat oven to 425°F | 220°C (standard ovens) or 390°F | 200°C (fan-forced or convection ovens).
  • Step 2
    Line a baking pan with parchment (or baking) paper. Transfer chicken to the pan. Drizzle with the oil and rub Loubier Gourmet Hot Chipotle Seasoning, salt, and pepper all over to evenly coat. 
  • Step 3
    Bake chicken in a preheated oven for 30-40 minutes, or until internal temperature is 165°F (75°C) using a meat thermometer. It should be golden with crisp edges.*
  • Step 4
    For crispier chicken, change your oven setting to broil (or grill in Aus/UK) on high during the last 2-3 minutes of cooking until golden.
  • Step 5
    *OPTIONAL STEP: While chicken is in the oven, melt butter in a small skillet. Sauté garlic until fragrant (30 seconds), and remove pan from heat. Stir in parsley, then pour butter mixture into pan juices, stirring well to combine all of the flavors together.
  • Step 6
    Remove pan from oven, pour butter mixture onto bottom of the chicken pan and let rest for 5 minutes for the chicken to absorb juices.
  • Step 7
    To serve, transfer chicken to serving plates and glaze chicken with Loubier Gourmet Mild BBQ Sauce and garnish with freshly chopped parsley.

Directions for Sautéed Kale

  • Step 1
    Heat olive oil in a large saucepan over medium-high heat.
  • Step 2
    Add the onion and Loubier Gourmet All Purpose Seasoning and cook until soft, but not colored. 
  • Step 3
    Remove cover and continue to cook, stirring until all the liquid has evaporated. 
  • Step 4
    Season with salt and pepper to taste, and serve next to the chicken.
  • Step 5
