Loubier's Breakfast Hash

  • 3 Tablespoon Loubier Gourmet Hot or Mild Chipotle Seasoning
  • 2 Tablespoons Olive Oil
  • 3 Large Potatoes
  • ½ White Onion
  • 1 Sausage of Any Kind
  • 3 Large Carrots
  • 4 Mushrooms
  • 2 Large Avocados 
  • 4 Eggs
  • Water



  • Step 1
    Dice up the potatoes, carrots, onion to preferred size.
  • Step 2
    Add 2 tablespoons of olive oil to a large skillet and heat over medium heat. Add the diced onions first, move them around, and after a minute or two add the diced potatoes and carrots.
  • Step 3
    While the onions, potatoes, and carrots cook, dice the mushrooms and sausage.
  • Step 4
    Add the mushrooms and sausage to the large skillet and season with 3 tablespoons of Loubier Gourmet Hot or Mild Chipotle Seasoning. Mix and move occasionally.
  • Step 4
    After a couple of minutes of cooking the hash, add water (about 1/2 cup) to deglaze. Eventually, the water will mostly evaporate and leave a beautiful glaze throughout the hash.
  • Step 5
    Cook up the eggs however preferred, and add them to the hash (if scrambled, add them to the hash before plated, but if fried or poached, add them after the hash is plated).
  • Step 6
    Cup up an avocado and top the hash with it. 
  • Step 7
