Ingredients
- Loubier Gourmet's Hot or Mild Chipotle Seasoning
- 2 Eggs
- 1 Avocado
- 8 Tomatillos
- 4 Dry California Chiles
- 2 Dry Chiles de Arbol
- 10 Tortillas
- 1 Tbs Olive Oil
- Half a Red Onion
- Half a Bunch Cilantro Stems
- Sour Cream
Directions
Step 1
Cover tomatillos and chiles in water and boil.
Step 2
Cut tortillas into triangles. Toss with oil and Loubier Gourmet's Chipotle Seasoning. Air-fry for 15-20 minutes (or fry until golden).
Step 3
Once the tomatillos and chiles are done boiling, you're going to work on each individual salsa. Save your water for later.
Directions for Green Salsa
Add your tomatillos, 1 Chile de Arbol, 1/4 of red onion, a quarter of a bunch of the cilantro stems, and 1 tbs of Loubier Gourmet Chipotle Seasoning into a blender and purée.
Directions for Red Salsa
Add all remaining chiles into a blender with the same measurements of red onion, cilantro stems, and Loubier Gourmet Chipotle Seasoning. Add water to thin out desired consistency.
Step 4
Once your tortillas have turned into chips, top with desired salsa (or both), 1 fried egg, half an avocado, diced onion, cilantro, and sour cream (toppings as desired).
