First, I want to clarify that this type of rice has many names to it. I tend to call it Mexican Rice because I am Mexican and I grew up eating this rice every single day. But you might hear it being called Spanish Rice, Red Rice, or even Arroz Rojo. Regardless, the flavor is the same, and it is so easy to make!
And if you are looking to add a rice cooker to your cooking tools arsenal we'd recommend these three:
Homemade Spanish Rice Recipe

Total Time: 35 Minutes

Place a heavy skillet over medium-high heat and add oil once it has warmed up. Add rice and stir until rice is golden brown.
In a blender, add your garlic, onion, tomatoes, Loubier Gourmet Hot or Mild Chipotle Seasoning, and a small amount of water. Blend, and add water until purée equals a total of 2 cups.
Add purée to the rice, lower heat and cover.
Simmer for 20-25 minutes until all liquid is absorbed.
Remove from heat and allow to sit, covered, for 5 minutes.
Fluff with a fork and serve.
