Loubier's Mexican Red Rice

Ingredients

  • 1 Tablespoon Loubier Gourmet Hot or Mild Chipotle Seasoning
  • 1 Cup White Rice
  • 2 Garlic Cloves
  • ¼ White Onion
  • 2 Tomatoes
  • 2 Tablespoons Oil
  • Water

  

Directions

  • Step 1
    Place a heavy skillet over medium-high heat and add oil once it has warmed up. Add rice and stir until rice is golden brown.
  • Step 2
    In a blender, add your garlic, onion, tomatoes, Loubier Gourmet Hot or Mild Chipotle Seasoning, and a small amount of water. Blend, and add water until purée equals a total of 2 cups.
  • Step 3
    Add purée to the rice, lower heat and cover.
  • Step 4
    Simmer for 20-25 minutes until all liquid is absorbed. 
  • Step 4
    Remove from heat and allow to sit, covered, for 5 minutes.
  • Step 5
    Fluff with a fork and serve.
  • Step 6
