- 4 Lobster Tails
- 2 Large Red Potatoes
- 4 Tablespoons of Butter
- 2 Minced Scallions Stalks
- 1 Tablespoons of Loubier Gourmet Italian Topper
- 1 Tablespoon of Loubier Gourmet Chipotle Mild Seasoning
- 2-3 Tablespoons of Thousand Island Dressing
Add 1 tbsp of butter to a medium pot of water along with two potatoes, once it is boiling add your lobster tails.
Remove lobster tails and place them in a medium bowl, and continue to boil potatoes until tender all the way through.
Add the remaining 3 tbsps of butter, 1 tbsp of Loubier Gourmet Italian Topper, and 1 tbsp of Loubier Gourmet Chipotle Mild Seasoning to hot lobster tails and let sit until melted. Once cooled remove the meat from lobsters by splitting them in half and shred until pieces are bite-size.
Once potatoes are cooled, chop into small cubes and add to the bowl along with the minced scallions and toss in the thousand island sauce to bind together.
Add a little crisp to your sourdough rolls by placing in the oven for a few minutes on low broil or at 375 for ten minutes.
