Loubier's Stuffed Bell Peppers

  • 1 Pound Lean Ground Beef
  • 2 Tablespoons of Loubier Gourmet Hot or Mild Chipotle Seasoning
  • 1 Medium Onion Chopped
  • 6 Bell Peppers
  • 8 Mushrooms Chopped
  • A Small Bunch of Cilantro
  • 5 Green Onions Chopped
  • 1 EggPlant Chopped
  • 1 Cup Shredded Parmesan Cheese or Monterey Jack Cheese
  • Salt & Pepper


  • Step 1
    Preheat the oven to 350 degrees F.
  • Step 2
    Start cooking the ground beef in a large frying pan over medium high heat for 5 minutes. Add the onions (leave the chopped tops of the green onions), mushrooms, eggplant, and season it all with 2 Tablespoons of Loubier Gourmet Hot or Mild Chipotle Seasoning.
  • Step 3
    While your filling is cooking, cut your bell peppers in half and spoon out the insides. Rinse to ensure all the seeds are out. Lightly sprinkle the insides of the peppers with salt and pepper.
  • Step 4
    Put your halved bell peppers on a baking sheet/dish, and fill them with the ground beef and veggies that have been cooking. Top them off with your shredded cheese and bake them for 20 minutes or until peppers are tender and cheese is browned. 
  • Step 5
    Serve and top with the remaining green onions.
  • Step 6
