Homemade Soup Recipes from Scratch

Squash Soup with a Sandwich

Not only can a delicious soup be created in under an hour, but if you use all fresh ingredients, your tastebuds and tummy will thank you! Perfect for colds, cold nights, or winter in general, soup is always a delicious and body warming meal!

Butternut Squash Soup

In this case, we went with creating two homemade, delicious, creamy soups: Tomato Basil Soup & Acorn Squash Soup! We went with these two because they're our favorites to pair with a mouthwatering grill cheese sandwich! And trust me, this isn't just any grilled cheese! Our special grilled cheese recipe is coming soon!

Homemade Tomato Basil Soup Recipe 

Prep Time: 10 minutes

Cook Time: 45 Hour

Total Time: 55 minutes

Serves: 3-4

Ingredients
  • 5 Fresh Ripe Tomatoes (Cut into Halves) 
  • 1 Whole Onion (Cut into Quarters)
  • 1 Whole Garlic (Sliced in Half)
  • 1 Red Bell Pepper (Halved and Optional)
  • Loubier Gourmet Italian Topper
  • 2 Cups Veggie Broth
  • ½ Cup Heavy Cream
  • ¼ Cup Parmesan Cheese
  • A Bunch of Fresh Basil
  • Fresh Herbs of your choice
  • Olive Oil
  • Sour Cream
  • Salt & Pepper to Taste
Directions
  • Step 1
    You want to start by preheating an oven to 400 degrees F. Then begin to lay your tomatoes, onions, garlic, and red bell pepper out on an oven safe baking sheet. 
  • Step 2
    Pour olive oil on them, season them with Salt, Pepper, and Loubier Gourmet Italian Topper Seasoning, and sprinkle your fresh herbs (we went with Rosemary).
  • Step 3
    Throw your baking sheet into the oven for 35 minutes, then broil on high for 5-10 minutes.
  • Step 4
    Once your veggies are ready, you want to throw them into a blender (make sure to remove the onion and garlic skin). Add in your veggie broth, heavy cream, fresh basil, and parmesan cheese. Blend. Season again with salt, pepper, and Loubier Gourmet Italian Topper to taste, and blend one last time.
  • Step 5
    Serve, top with olive oil, sour cream, basil, and whatever else you may prefer like pumpkin seeds for example, and enjoy :)

Homemade Acorn Squash Soup Recipe

Prep Time: 10 minutes

Cook Time: 45 Hour

Total Time: 55 minutes

Serves: 3-4

Ingredients
  • 1 Acorn Squash (Cut in Half) 
  • 1 Whole Onion (Cut into Quarters)
  • 1 Whole Garlic (Sliced in Half)
  • 1 Kabocha Squash (Cut in Half)
  • 1 Large Carrot (Cut in Half the Long-way)
  • Loubier Gourmet Italian Topper
  • 2 Cups Veggie Broth
  • ½ Cup Heavy Cream
  • Thyme
  • Olive Oil
  • Sour Cream
  • Salt & Pepper to Taste
Directions
  • Step 1
    You want to start by preheating an oven to 400 degrees F. Then begin to lay your squash, onions, garlic, and carrot out on an oven safe baking sheet. 
  • Step 2
    Pour olive oil on them, season them with Salt, Pepper, and Loubier Gourmet Italian Topper Seasoning, and sprinkle some Thyme over it all.
  • Step 3
    Before throwing your sheet into the oven, make sure your squash is facing downwards. Throw your baking sheet into the oven for 45 minutes.
  • Step 4
    Once your veggies are ready, you want to throw them into a blender (make sure to remove the onion and garlic skin). Add in your veggie broth, heavy cream. Blend. Season again with salt, pepper, and Loubier Gourmet Italian Topper to taste, and blend one last time.
  • Step 5
    Serve, top with olive oil, sour cream, and whatever else you may prefer like pumpkin seeds for example, and enjoy :)
