Total Time: 7 hours 15 minutes or 10 hours 15 minutes
Serves: 4
Ingredients
- 3 Tablespoons of Loubier Gourmet’s Hot or Mild Chipotle Seasoning
 - 1 12-Ounce Pork Tenderloin
 - 1 Medium Onion
 - ½ Cup of Ketchup
 - ¼ Cup Orange Juice
 - 2 Tablespoons of Worcestershire Sauce
 - Flour Tortillas
 - ½ Small Medium Head of Red Cabbage, Shredded
 - Sliced Radishes
 - Cilantro
 - 1 Cup Water
 - ½ Cup Apple Cider Vinegar
 - ½ Cup Red Wine Vinegar
 - 2 Teaspoons Sugar
 - 1 Teaspoon Salt
 - 1 Teaspoon Black Pepper

Directions
-
Step 1
Place water, both kinds of vinegar, and sugar in a bowl and whisk together until the sugar is mostly dissolved, and stir in the salt and pepper. Pour over the cabbage in a jar/bowl that can be covered or sealed. Let rest until the end for they need time to pickle. -
Step 2
In another bowl, season the pork tenderloin with Loubier Gourmet’s Hot or Mild Chipotle Seasoning. -
Step 3
In a slow cooker, whisk together orange juice, ketchup, Worcestershire sauce, salt, and pepper. Add onion. Place the pork on top of the onion. (Slow cooker can be substituted with a pot placed in an oven at 325 degrees, just divide cooking time by 2.) -
Step 4
Cover and cook for 7 hours on high or 10 hours on low, or until the pork is very tender and internal temperature is 145 degrees F. -
Step 5
Once the meat is tender, remove the pork from the cooking liquid and discard the fat from the cooking liquid. -
Step 6
With hands or two forks, shred the pork, and return the shredded pork to the slow cooker bowl with remaining cooking liquid. -
Step 7
Serve meat with flour tortillas, and pickled cabbage, sliced radishes, and cilantro. -
Step 8
Enjoy :)
